Let's Brunch!


I absolutely love brunch! I love discovering new places to check out around the city, but the best place of all, is by far, a little place called Home. Everything is made fresh and with love. The Mimosas and Bellini's are truly bottomless and the best part, you don't even have to get out of your PJ's! I decided to treat myself and my husband to a healthy brunch for the books, and I satisfied every single thing I'd been craving for months. Today I'm sharing how I made it happen so you can make your next brunch in the comfort of your home and minimal effort.

A mi me fascina el brunch! Me encanta descubrir nuevos lugares por toda la ciudad, pero el mejor lugar de todos es un pequeño lugar conocido como Mi casa. Todo es hecho fresco y con amor. Las Mimosas y los Bellini's nunca se acaban y la mejor parte es que ni te tienes que cambiar de tus pijamas! Decidí hacer un brunch saludable para mi esposo y yo espectacular y pude satisfacer todos mis antojos que llevo meses pensando en ellos. Hoy les comparto como lo logré para que tu próximo brunch lo hagas en tu casa y con mínimo esfuerzo.

Veggie Scramble / Revoltillo de Vegetales
Ingredients / Ingredientes:
4 Organic Cage-free Extra Large Eggs / 4 Huevos Orgánicos
1/2 cup Yellow Bell Pepper / Orange Bell Pepper / 1.2 taza de Pimientos Morrones 
1/4 Cups Julienned Red Onions / 1/4 taza de cebolla morada
2 Sliced Organic Baby Bella Mushrooms / 2 Hongos Baby Bella Orgánicos
5 (or however many you like) Organic Grape Tomatoes / 5 (o cuantos quieras) Tomates Uva
2 Basil Leaves /  2 Hojas de Albahaca
3-4 Roasted Tomatoes / 3-4 Tomates Asados
Handful of Organic Baby Spinach / Un puñado de Espinaca Orgánica
Organic Extra Virgin Olive Oil / Aceite de Oliva Extra Virgen Orgánico

Directions:
Using a large frying pan, preheated at medium heat coated with Olive Oil, sauté the veggies, leaving the spinach out. Add the spinach when the tomatoes begin to reduce and the onions become translucent. Lightly wilt the spinach, but avoid overcooking them to help maintain the nutrients. Whip the eggs, add Himalayan sea salt to taste, dash of pepper, and a pinch organic all spice seasoning. Cook eggs gradually scrambling to achieve desired texture. Add cheese if you like. I recommend organic, of course, or vegan cheese.

Instrucciones:
Utilizando un sartén, precalentado a fuego medio con el aceite de oliva, cocine los vegetales, dejando a un lado la espinaca. Añada la espinaca cuando los tomates se reduzcan y las cebollas se comienzan poner transparentes. Evite sobre cocinar la espinaca para que no pierda sus nutrientes. Bata los huevos, añadiendo sal Himalaya a gusto, una pizca de pimiento y sazón orgánico si tiene. 





Pancakes
Ingredients/ Ingredientes:

1 cup Organic whole wheat Pancake mix /  1 taza de mezcla de Pancake de trigo Orgánica
1/2 cup Organic Unsweetened Almond Milk / 1/2 taza de leche de Almendra Orgánica
1 Organic Cage Free Egg (optional) / 1 Huevo Orgánico (opcional)
1 tsp Organic Vegan Vegetable spread / 1 cdta de sustituto de mantequilla vegano
1/4 tsp Vanilla Extract / 1/4 cdta de Extracto de Vainilla
1/4 tsp Cinnamon / 1/4 cdta de Canela

*Basically I swapped out the ingredients of regular pancakes with healthier options.
*Básicamente intercambié los ingredientes de panquecas regulares por opciones saludables.

To top the pancakes, my husband likes to use honey (he lived in Spain for a year and that's how they roll). I'm a Maple Syrup kinda gal, so I use the Organic kind. It's a little pricey, but totally worth it!

Para endulzar las panquecas cocidas a mi esposo le gusta la miel (vivió en España un año y ahí lo aprendió a usar). A mi me gusta el sirope de maple, así que lo uso orgánico también. Es un poco costoso, pero vale la pena.






Fun with Toast! /Diversión con Tostadas!
I didn't want to have boring old toast so I found this "You bake it yourself" Organic Whole Grains Bread at my local grocery store bakery. It's pre-baked, but you do have to bake for 12-16 minutes, let it set for 10 minutes then slice however you like and serve. I made some garlic bread for the hubs with the Vegan spread, mashed garlic and topped it with an Oregano, Basil, Roasted Tomato Spice Blend I found at the Market. For my toast, I got a little more creative. I'm a New Yorker, so I had to have lox and a schmear (I used Brooklyn style Smoked Salmon and Organic Cream Cheese). My Avocado toast had Roasted Bell Pepper Pesto, Olive Oil, and my new favorite spice blend I used on the hubs' toast, and for the wild card I just combined the cream cheese, avo, and lox. My mouth is watering just thinking of all this!

No quise tener tostadas aburridas así que encontré un pan pre-cocido que sólo tienes que hornear por 12-16 minutos, orgánico de granos en la panadería de mi supermercado local. Luego de hornear, lo dejas por 10 minutos antes de cortar como desees y servir a gusto. Preparé pan con ajo para mi marido usando el sustituto de mantequilla vegana, ajo majado y unas especies que encontré en el mercado de orégano, albahaca y tomates. Para mis tostadas, me puse más creativa. Soy Nuyorquina, así que no puede faltar el queso crema y salmón ahumado (usé un salmón al estilo Brooklyn y queso orgánico). Mi tostada de aguacate llevó un pesto de pimientos cocidos, aceite de oliva y la mezcla de especies, y para el adicional simplemente usé el queso crema, aguacate y salmón. Se me hace la boca agua no más de pensar en esto!


Bellini's

So, you see... you can enjoy Brunch at home in a healthy way. I love the fact that I can control the quality of the ingredients and stick to our New Year's resolution of eating healthier without losing the joy of food.
